Homemade Chicken Curry

Ingredients

  • 400g Chicken
  • 1 Medium Onion
  • 2 Tbsp Vegetable Oil
  • 200g Plum Tomatoes
  • 1 Heaped Tomato Purée
  • 2 Tbsp Curry Powder
  • 1 Tsp Garam Masala
  • 2 Garlic Cloves
  • 1 Inch Fresh Ginger
  • 2 Red Chillies
  • Juice of ½ Lemon
  • Salt for Seasoning
  • Coriander for Garnishing
  • 1 Cup of Water
  • 2 portions of Rice

Method

  1. Chop 1 onion finely
  2. Peel and crush 2 garlic cloves
  3. Peel and chop ginger finely
  4. Chop green chilli’s finely
  5. Heat the pan with medium heat and add 2Tbsp Vegetable Oil
  6. Add the chopping Onions until golden brown
  7. Add ginger and garlic, stir for a few minutes
  8. Add curry powder, chilli’s, salt, 200g plum tomatoes and tomato purée and continue to stir
  9. Add chicken, 1 cup of water and lemon juice
  10. Cook on medium heat until Chicken is cooked through and until sauce thickens
  11. Add garam masala and stir, turn the heat off
  12. Transfer the curry into serving bowl and chop coriander to garnish Serve with Rice
