Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 650g, chicken breasts
  • 3 tsp ground turmeric
  • 1 tsp chilli powder
  • 1/2 teaspoons salt
  • 400g tin chopped tomatoes
  • 3 tsp ground cumin
  • 3 tsp ground coriander
  • 2 tbsp fresh root ginger
  • 25g chopped coriander leaves
  • 2 portions of rice

Method

  1. Heat oil in a large frying pan on a medium heat.
  2. Stir in onions and garlic.
  3. Add the chicken, then stir in and season with turmeric, chilli powder and salt.
  4. Add the chopped tomatoes and simmer, covering the pan for 20 minutes.
  5. Uncover, and simmer for a further 8 minutes to thicken the sauce.
  6. Add the remaining spices; cumin, ground coriander, ginger and fresh coriander and then simmer for a further 5.
  7. Serve with rice.
